The American Culinary Federation (ACF), Certified Working Pastry Chef (CWPC) credential is recommended for entry-level pastry culinarians. Applicants are required to have five years of relevant experience; education and training may be used in place of experience as determined by the Agency. Candidates must provide documentation of three 30-hour courses; one in Nutrition, one in Food Safety and Sanitation, and one in Supervisory Management. Candidates must also pass the examination.

Education and/or Experience REQUIREMENTS
Applicants must have High school diploma/GED plus 50 hours of continuing education and five years as an entry level culinarian/pastry experience. Experience must be within the past 10 years.
Option 2:Applicants must have 150 hours of continuing education and five years as an entry level culinarian/pastry experience. Experience must be within the past 10 years.
Option 3:Applicants must have an Associate’s degree in culinary arts with three years experience as an entry level pastry culinarian.
Option 4:Applicants must have completed American Culinary Federation Education Foundation (ACFEF) Apprenticeship program and have minimum 4000 hours on the job training within past ten years.
Training REQUIREMENTS
Applicants are required to provide documentation of three 30-hour courses—one in Nutrition, one in Food Safety and Sanitation, and one in Supervisory Management. If these courses were taken more than five years ago, an eight hour refresher course is required in each topic. These courses are available through ACF approved providers or any academic institution. (ServSafe must be a documented 30-hour course to fulfill the mandatory requirement. The 8- or 16-hour courses are only counted as a refresher.
