The American Culinary Federation (ACF), Certified Secondary Culinary Educator (CSCE) credential is an advanced-career level designation for individuals who teach foodservice management, cooking, baking, and food preparation. ACF offers two educator certifications; only the CSCE requires that the candidate have teaching experience. The CSCE is recommended for professionals who have training or education in the culinary arts and who work as educators at accredited secondary or vocational institutions. CSCEs develop, implement, administer, evaluate, and maintain culinary arts and foodservice management curricula. CSCE candidates must meet training or educational requirements, meet experience-related criteria, and must pass an exam.

Twelve hundred (1200) secondary or postsecondary teaching contact hours are required, plus a 30-hour Basic Food Prep Course. Experience must be within the past 10 years.

Candidates for the CSCE must have an Associate's Degree in Culinary Arts or a Bachelor Degree in any discipline and a 30-hour Basic Food Prep Course.

Candidates must have 120 hours of Education Development with a minimum of eight hours in the following subjects:

  • Curriculum Planning & Development
  • Evaluation & Training
  • Teaching Methodology Educational Psychology

Candidates must take three 30 hour courses in each of the following:

  • Nutrition,
  • Food Safety & Sanitation and
  • Supervisory Management.
Candidates must take Eight (8) hour refresher courses for courses taken more than than five (5) years ago. Courses are available through ACF-approved providers or any academic institution.

The Certified Secondary Culinary Educator (CSCE) credential has the following other requirements:

  • Candidates must submit a 45 to 60 minute video demonstrating teaching proficiency of the culinary arts in front of a live audience. The video should be submitted in CD-ROM/DVD formats only. A completed lesson plan, including assessment, must be submitted with the video. The video should demonstrate the applicant’s skills and knowledge.

If candidate is a current Certified Chef de Cuisine (CCC), Certified Working Pastry Chef (CWPC), Certified Executive Chef (CEC), or Certified Executive Pastry Chef (CEPC) who has taken a practical exam, no practical exam is required.
