A Certified Master Chef (CMC) possesses the highest degree of professional culinary knowledge and skill. These professionals possess a mastery of cooking techniques. The CMC-level is the highest and most demanding level of achievement of all ACF certification levels, granted only after the candidate has passed an intensive exam process test of culinary skills. Applicants must hold a current ACF Certified Executive Chef (CEC) or Certified Culinary Educator (CCE), and are required to submit letters of recommendation from two CMCs. Additional requirements are holding a current sanitation certificate or Hazard Analysis and Critical Control Point (HACCP) certification, and completion of courses from institutions in Cost Management, Management, and Wine, along with passing the CMC Examination.
